We’ve used three types of cold-pressed extra virgin olive oil and olive leaf tea from the world-class groves of Victoria’s Cobram Estate.

A distinctly modern Australian Gin, Olive Leaf Gin is a savoury gin, perfect for a Martini or Gin and Tonic. The clever use native macadamia nuts and lemon myrtle give the gin distinctly modern Australian twist though.This set features our award-winning Edinburgh Gin Classic - a labour of love, from distillation to first sip, and the heart of the Edinburgh Gin range.

Formed of the rich alluvial soil deposited by the river, it is a fertile land bathed in the Provençal sunshine and cooled by the mistral wind. Using olive oil and olive leaf as two of the key botanicals, building on the base of Four Pillars Rare Dry Gin that is delicious in a martini or with a splash of tonic.

La Mallorquina is distilled only once a year in small batches, which makes this gin exclusive and very special. The olive brings a lovely umami element, while the basil gives a delicate herbal, almost floral, flavour. The stars of the show are Nocerella Olives and Basil, both of which are recognizable, but neither overwhelms the gin. In the commune of Avignon in the middle of the Rhône is the island of Barthelasse: the largest river island in Europe. By combining botanicals such as olive leaf, oregano, lemon, grapefruit and juniper, we have created a London Dry that captures the spirit of a summer breeze.

Some of It’s botanicals are uniquely derived from its (very special) region and, bottom line, it is a wonderful gin for sipping, vis-à-vis its complexity, frozen or room temperature - – or mixing, for a unique twist before the twist! This is a savoury gin rather than a sweet style and is perfectly suited for a martini, classic, dirty, dry, wet, perfect and especially a Gibson cocktail. There’s also a helping of lemon and grapefruit in there too, but the focus here is most definitely the gin’s savoury elements. The name Four Pillars was chosen as a reflection of the four pillars of the gin; the still, the water, the botanicals and their passion for craft.
